Dry Red Chilli

The Dry red chilli is the ripened fruit. When fully ripe, it has a flavour different from the green chilli. During certain seasons, large quantities of the chilli reach the market, far in excess of the normal consumption. It is essential to preserve all this surplus produce, in the interests of both the producer and the consumer. After all, consumers need chilli in some form in their cooking. The farmer cannot afford to lose his produce.

Nature has provided us with an excellent means of preserving the red chillies: by drying them. The red chillies are dried under the hot sun in open yards for several days. These dried red chillies can be kept for several months, even for a couple of years, without their getting spoiled. The dried product retains much of the flavour and taste of the original. After drying, the red chilli can be powdered.
