Description
Cumin is referred to as the dried seed of 'Cuminum cyminum' that belongs to the parsley family. Cumin is very commonly used spice for variety of dishes such as curries (powder mix), rice, lentils, beverages, and even medicine and cosmetics. Cumin is considered the most important spice in the world after pepper.
Though originally native of Egypt, Cumin has been cultivated in India thousands and thousands of years. India being the world leader in the context of spice production, it is also the largest producer of cumin in the world. Gujarat, Western state of India, is known to be the largest producer of cumin seeds of the best quality.
After harvesting, the cumin plants are dried in the sun. The seeds are beaten out by threshing the dried plants with sticks. These seeds are dried once again to reduce moisture below 10 The dried seeds are winnowed using a traditional winnowing basket to remove the dirt, dust, leaves and twigs. Finally the cumin seeds undergo sorting process.
